4 boneless, skinless chicken breasts
1 cup buttermilk
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon pepper
1 teaspoon paprika
1/2 teaspoon garlic powder
Vegetable oil for frying
1 1/2 cups waffle mix
Water or milk, as required by the waffle mix
Maple syrup for serving
Instructions:
Buttermilk should be added to the bowl containing the chicken breasts. Allow them to marinade in the fridge for at least 30 minutes and up to overnight.
Heat vegetable oil in a deep skillet or frying pan over medium-high heat.
Remove the chicken breasts from the buttermilk and dredge them in the flour mixture, coating them evenly.
Fry the chicken in the hot oil for about 6-8 minutes per side or until golden brown and cooked through. Drain on a paper towel-lined plate.
In a separate bowl, prepare the waffle mix according to the package instructions, using water or milk as specified.
